This Festive Cocktail – A Recipe

We present an easy take on a drink from our latest cocktail list. It's a party-sized pre-mixed which is packed with the tastes of the holiday season, rendering it perfect for a festive gathering. Save the extra citrus syrup you can use for brunch beverages, desserts, or to make more rounds of the drink.

The Bikini Cocktail

Makes enough for 10 guests

For the Clementine Syrup (yields 750ml)

300ml fresh clementine juice
200ml recently pressed lemon juice
500g caster sugar

For the Drink (makes 850ml, enough for 10)

400ml good quality vodka
100ml London dry gin
150ml peach schnapps
200ml citrus syrup (from the recipe above)
A few cranberries, for garnish
Mandarin essential oil, as a final touch

Directions

Making the Citrus Syrup: Place all the ingredients into a saucepan, heat until it reaches a simmer, agitating so the sugar melts. After that, take off the stove and leave to cool entirely. Pour to a clean bottle, close it and refrigerate it in the fridge, where it will keep for about a month.

To make Cocktail Base: Combine the specified liquid ingredients into a sizeable container, leave to sit for an hour, then pass it through best through a fine cloth, making it completely strained.

To serve: Pour 85ml from the batch mix into a mixing glass filled with ice, gently stirring gently for one minute until cold. Pour to a chilled martini glass or a similar vessel, top with the cranberries adding the final touch with a light spray with the mandarin essence over the top.
